Ingredients

  • Beef chuck (cubed)
  • Carrots (sliced)
  • Potatoes (diced)
  • Onion (chopped)
  • Garlic (minced)
  • Beef broth
  • Tomato paste
  • Worcestershire sauce
  • Flour (or cornstarch for thickening)
  • Olive oil
  • Bay leaves
  • Thyme
  • Salt
  • Black pepper

Instructions

  • Set the Instant Pot to sauté mode and heat olive oil. Brown the beef cubes in batches, then remove and set aside.
  • Add onions and garlic to the pot and sauté until softened.
  • Stir in flour and cook for 1 minute. Add tomato paste, beef broth, Worcestershire sauce, bay leaves, thyme, salt, and pepper. Stir well.
  • Return the beef to the pot and add carrots and potatoes.
  • Close the lid, seal the valve, and set the Instant Pot to high pressure for 35 minutes.
  • After cooking, allow for a 10-minute natural release, then perform a quick release. Remove bay leaves and serve.

Notes

  • For a thicker stew, stir in a cornstarch slurry after pressure cooking and sauté for a few minutes until thickened.
  • Adding a splash of red wine enhances the flavor of the stew.
