  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 3 tbsp olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chicken broth (optional, for extra moisture)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper.
  • Place the chicken in a large ziplock bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Marinate in the refrigerator for at least 30 minutes (or up to 8 hours for more flavor).
  • Preheat the oven to 375°F (190°C). Transfer the chicken to a baking dish, skin-side up. Pour any remaining marinade over the chicken. Add chicken broth if desired.
  • Bake for 35–40 minutes, or until the chicken is golden and fully cooked with an internal temperature of 165°F (74°C).
  • Remove from the oven and garnish with fresh parsley. Serve hot with rice, roasted potatoes, or a fresh Greek salad.

Notes

  • For extra crispy skin, broil the chicken for the last 2–3 minutes of cooking.
  • This dish pairs wonderfully with tzatziki sauce or pita bread.
  • Use boneless, skinless chicken if preferred, but reduce the cooking time accordingly.
