  • Garlic (minced)
  • Red wine
  • Olive oil
  • Fresh thyme or oregano
  • Bay leaf
  • Salt and pepper
  • Parmesan cheese (grated)
  • Mozzarella (optional, for layering)

For the Béchamel Sauce:

  • Butter
  • All-purpose flour
  • Milk
  • Nutmeg (pinch)
  • Salt and pepper

Instructions

  • Prepare the Ragu:
    Heat olive oil in a large skillet, then sauté onion, garlic, carrot, and celery until softened.
    Add ground beef, breaking it up and cooking until browned.
    Pour in red wine and let it reduce by half.
    Add tomato sauce, tomato paste, fresh thyme, and a bay leaf. Simmer for 30-40 minutes, seasoning with salt and pepper.
  • Make the Béchamel:
    In a saucepan, melt butter, then whisk in flour to create a roux.
    Gradually add warm milk, whisking continuously until thickened.
    Season with salt, pepper, and a pinch of nutmeg. Remove from heat and set aside.
  • Assemble the Lasagna:
    Preheat oven to 375°F (190°C).
    In a greased baking dish, layer the lasagna: start with a layer of ragu, then add a layer of pasta sheets, followed by béchamel sauce, and a sprinkle of Parmesan (add mozzarella if desired).
    Repeat layers, finishing with béchamel and a generous layer of Parmesan on top.
  • Bake:
    Cover with foil and bake for 30 minutes.
    Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
    Let rest for 10 minutes before serving.
