  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, softened
  • 3/4 cup molasses
  • 1 large egg

Instructions

  • In a large bowl, whisk together flour, brown sugar, salt, ginger, cinnamon, cloves, and baking soda.
  • Add softened butter, molasses, and egg. Mix until the dough is smooth and well-combined.
  • Divide the dough in half, shape into discs, and wrap in plastic wrap. Chill for at least 1 hour.
  • Preheat oven to 350°F (175°C). Roll out dough to 1/4-inch thickness on a lightly floured surface.
  • Cut into shapes using cookie cutters and place on a parchment-lined baking sheet.
  • Bake for 8-10 minutes or until edges are firm. Cool before decorating with icing, if desired.

Notes

  • Dough can be made ahead and chilled for up to 2 days.
