Ingredients

Scale
  • For the bars:
    • 1/2 cup unsalted butter, melted
    • 3/4 cup brown sugar
    • 1/4 cup molasses
    • 1 large egg
    • 1 tsp vanilla extract
    • 1 3/4 cups all-purpose flour
    • 1 tsp baking soda
    • 1 tsp ground ginger
    • 1 tsp cinnamon
    • 1/4 tsp ground cloves
    • 1/4 tsp salt
  • For the cream cheese frosting:
    • 4 oz cream cheese, softened
    • 1/4 cup unsalted butter, softened
    • 1 1/2 cups powdered sugar
    • 1 tsp vanilla extract

Instructions

  • Preheat the oven: Preheat to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper or grease it well.
  • Make the gingerbread dough: In a large bowl, whisk together melted butter, brown sugar, and molasses. Add the egg and vanilla extract and mix until combined.
  • Mix the dry ingredients: In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Bake the bars: Spread the dough evenly into the prepared pan. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  • Make the frosting: Beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  • Frost the bars: Once the gingerbread bars are fully cooled, spread the cream cheese frosting evenly over the top. Cut into squares and serve.

Notes

  • Chill the bars in the fridge before frosting for cleaner cuts.
  • Sprinkle the frosted bars with festive holiday sprinkles or a dusting of cinnamon for extra decoration.
  • You can store the bars in an airtight container in the fridge for up to 5 days.
