2 pounds red potatoes
6 slices bacon
1 small yellow onion, diced
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar

Boil potatoes in salted water until tender, about 15-20 minutes. Drain and slice.
