  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 lb potato gnocchi
  • 1 cup baby spinach
  • 1/2 tsp red pepper flakes (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season diced chicken with salt and pepper, then cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, add garlic and Italian seasoning, cooking until fragrant.
  • Pour in heavy cream and chicken broth, stirring to combine.
  • Add gnocchi and simmer for 5-7 minutes until tender.
  • Stir in Parmesan cheese and baby spinach until wilted.
  • Return the cooked chicken to the skillet and mix well.
