Ingredients

  • Cooked chicken (shredded)

  • Rotel (diced tomatoes with green chilies)
  • Cooked rice (white or brown)
  • Shredded cheddar or Mexican blend cheese
  • Sour cream
  • Cream of chicken soup
  • Taco seasoning
  • Salt and pepper
  • Fresh cilantro (optional garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken, black beans, corn, Rotel, cooked rice, sour cream, cream of chicken soup, taco seasoning, salt, and pepper. Mix well.
