  • 1 can kidney beans, drained
  • 1 can pinto beans, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1 cup beef broth
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  • In a skillet, heat olive oil over medium heat. Add diced onion, garlic, and bell pepper; sauté until softened.
  • Add ground beef to the skillet, cooking until browned, and breaking it up as it cooks.
  • Transfer the beef mixture to the slow cooker. Add chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using).
  • Stir in diced tomatoes, kidney beans, pinto beans, and beef broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chili is rich and thickened.
  • Season with salt and pepper to taste. Serve hot with your favorite toppings.
