This easy Mexican casserole recipe features layers of seasoned ground beef, beans, tortillas, and cheese, all baked to perfection for a hearty and flavorful dish. Great for busy weeknights or a crowd-pleasing meal, this casserole is packed with Mexican-inspired flavors and can be made with simple pantry ingredients.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (8 oz) corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 small flour or corn tortillas, torn into pieces
  • 1/2 cup sour cream (optional)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef until browned; drain excess fat.
  • Stir in taco seasoning, black beans, diced tomatoes, corn, and salsa. Simmer for 5 minutes.
  • In a greased casserole dish, layer half of the tortillas, then half of the beef mixture, and sprinkle with cheese. Repeat layers, ending with cheese on top.
  • Bake for 20-25 minutes, until cheese is melted and bubbly.
  • Serve hot, topped with sour cream if desired.

Notes

  • You can substitute ground beef with ground turkey or chicken for a lighter version.
  • Add jalapeños or extra salsa for more heat.
