  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 (15 oz) can white beans, drained and rinsed
  • 1 (4 oz) can diced green chilies
  • 1 cup frozen corn
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper, to taste
  • 1/2 cup cream cheese
  • 1/2 cup heavy cream
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  • Place chicken breasts, chicken broth, white beans, green chilies, corn, onion, garlic, cumin, chili powder, paprika, oregano, salt, and pepper into the crockpot.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Remove chicken, shred with two forks, and return to the crockpot.
  • Stir in cream cheese and heavy cream until combined.
  • Let cook for another 15 minutes until creamy.
  • Serve warm with desired toppings.
