  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup heavy cream
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onion, carrots, and celery until tender, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth, then stir in shredded chicken, thyme, parsley, salt, and pepper. Bring to a boil.
  4. Reduce heat and add egg noodles. Simmer until noodles are cooked, about 8-10 minutes.
  5. Stir in heavy cream and let cook for 2-3 minutes. Adjust seasoning if needed.
