  • 1.5 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp apple cider vinegar
  • 3 cloves garlic (minced)
  • 1/2 tsp ginger (minced)
  • 1/4 tsp red pepper flakes (optional for heat)
  • 2 green onions (optional for garnish)
  • Sesame seeds (optional for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes (if using). Stir and bring the sauce to a simmer.
  • Return the cooked chicken to the skillet, toss to coat in the sauce, and simmer for another 5-7 minutes until the sauce thickens and glazes the chicken.
  • Garnish with sliced green onions and sesame seeds if desired. Serve over rice or noodles.

Notes

If you prefer a thicker sauce, you can add a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) at the end to help the sauce thicken more. For a non-alcoholic version, substitute bourbon with apple juice or chicken broth.
