Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (28 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 cups fresh baby spinach
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the sausage over medium heat, breaking it into crumbles. Drain any excess grease.
  2. Add the cooked sausage, onion, garlic, chicken broth, diced tomatoes, tomato sauce, Italian seasoning, and red pepper flakes to the Crockpot. Stir well.
  3. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. About 30 minutes before serving, add the baby spinach, cheese tortellini, and heavy cream to the Crockpot. Stir and cover to finish cooking.
  5. Season with salt and pepper to taste before serving.

Notes

  • For a lighter option, use turkey sausage and substitute heavy cream with half-and-half.
  • This soup pairs well with crusty bread or a simple side salad.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
