  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 large onions, thinly sliced
  • 3 tbsp butter
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp thyme
  • 1 cup shredded Gruyère or mozzarella cheese

Instructions

  • In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Form into 1-inch meatballs.
  • In a skillet, melt butter over medium heat. Add onions and cook until caramelized, about 15-20 minutes.
  • Transfer caramelized onions to the crockpot. Place meatballs on top.
  • Add beef broth, Worcestershire sauce, and thyme. Stir gently to combine.
  • Cook on low for 4-5 hours, or until meatballs are cooked through.
  • Sprinkle cheese over the meatballs, cover, and cook until cheese is melted, about 10-15 minutes.
  • Serve with mashed potatoes, pasta, or crusty bread.

Notes

 

For extra flavor, use a combination of beef and pork for the meatballs. You can also broil the meatballs with cheese on top for a golden, bubbly finish.
