  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup vodka
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese, plus more for serving
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, cooking until fragrant.
  3. Stir in the vodka and simmer for 2-3 minutes to cook off the alcohol.
  4. Add the crushed tomatoes and simmer for 10 minutes, stirring occasionally.
  5. Reduce heat and stir in the heavy cream. Cook for 2-3 minutes until the sauce thickens.
  6. Add the cooked pasta to the sauce, tossing to coat. Stir in Parmesan cheese and adjust seasoning with salt and pepper.
  7. Serve immediately, garnished with fresh basil and extra Parmesan cheese.
