  • 1 cup heavy cream or coconut milk
  • 1/2 cup grated Parmesan cheese
  • 1 tsp fresh sage, chopped (or 1/2 tsp dried sage)
  • Salt and pepper to taste
  • Fresh parsley or extra Parmesan for garnish

Instructions

  • Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using), cooking until fragrant, about 1-2 minutes.
  • Stir in the pumpkin puree and cook for 2-3 minutes to enhance the flavor.
  • Add heavy cream (or coconut milk) and stir until the sauce is smooth and creamy.
  • Mix in Parmesan cheese and chopped sage. Cook for another 2-3 minutes, stirring until the cheese melts.
  • Season with salt and pepper to taste.
  • Toss the cooked pasta in the sauce, adding reserved pasta water as needed to reach the desired consistency.
  • Serve hot, garnished with fresh parsley or additional Parmesan.
