  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • Zest and juice of 1 lime
  • 1 tbsp soy sauce or tamari (optional for flavor)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Season chicken breasts with salt, pepper, paprika, and ground ginger.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–6 minutes on each side until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant.
  • Stir in coconut milk, lime zest, lime juice, and soy sauce (if using). Simmer for 2–3 minutes.
  • Return chicken to the skillet and coat in the creamy coconut lime sauce. Simmer for another 5 minutes until flavors meld.
  • Garnish with chopped cilantro and serve hot over rice, quinoa, or with veggies.
