  • 2 cups cooked chicken (shredded or cubed)
  • 4 cups fresh spinach (roughly chopped)
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chicken broth
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sautéing until softened, about 3-4 minutes.
  • Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  • In a large bowl, combine the cooked chicken, sautéed spinach, heavy cream, sour cream, chicken broth, Parmesan cheese, Italian seasoning, salt, and pepper. Stir well.
  • Transfer the mixture to the prepared baking dish and sprinkle shredded mozzarella cheese evenly on top.
  • Bake for 20-25 minutes, until the cheese is bubbly and golden brown.
  • Remove from oven and let it sit for a few minutes before serving.

Notes

You can add mushrooms or artichokes for extra texture and flavor. For a lighter version, substitute half-and-half for the heavy cream. Serve with rice, pasta, or a side salad for a well-rounded meal.
