Country Ranch Green Beans and Potatoes with Bacon is a savory and hearty dish featuring tender green beans, creamy potatoes, and crispy bacon, all tossed in ranch seasoning. This easy-to-make side dish is perfect for any family meal or potluck, offering rich, comforting flavors that pair well with a variety of mains.

  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 1 tbsp olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  • In a large pot, bring salted water to a boil. Add potatoes and cook for 10 minutes, or until fork-tender. Add green beans during the last 5 minutes of cooking. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1-2 minutes until fragrant.
  • Add the cooked potatoes and green beans to the skillet, tossing to coat in the garlic oil.
  • Sprinkle in the ranch seasoning mix and stir to combine.
  • Add crumbled bacon and season with salt and pepper.
  • Cook for another 2-3 minutes to heat through. Garnish with fresh parsley, if desired, and serve warm.

Notes

 

For extra flavor, drizzle with a bit of melted butter before serving. You can also substitute turkey bacon for a lighter option.
