    • 1 tsp vanilla extract
    • 1/2 cup milk
    • 1/3 cup rainbow sprinkles
  • For the Frosting:
    • 1/2 cup unsalted butter, softened
    • 2 1/2 cups powdered sugar
    • 2 tbsp milk
    • 1 tsp vanilla extract
    • Additional sprinkles for topping

Instructions

  • Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  • Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
  • Fold in the sprinkles gently to avoid color bleeding.
  • Scoop the batter into the prepared liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
  • Make the frosting: Beat butter until smooth. Gradually add powdered sugar, milk, and vanilla extract, beating until creamy.
  • Frost the cooled cupcakes and decorate with extra sprinkles.

Notes

  • Avoid using nonpareils sprinkles in the batter, as they may bleed. Jimmies or confetti sprinkles work best.
  • For extra fun, add a few sprinkles on top before baking to give a pop of color on the cupcake surface.
  • Store cupcakes in an airtight container at room temperature for up to 2 days.
