  • 1 egg yolk

  • 2 tbsp ice water

  • 1 cup heavy cream

  • 8 oz semi-sweet or dark chocolate (chopped)

  • 2 tbsp unsalted butter (room temp)

  • 1 tsp vanilla extract

Instructions

  1. Make the Crust: Combine flour, powdered sugar, and salt. Cut in butter until crumbly. Add egg yolk and ice water; mix to form dough.

  2. Press dough into tart pan and chill for 30 minutes.

  3. Preheat oven to 375°F (190°C). Prick crust with a fork and bake for 20 minutes or until golden. Let cool.

  4. Make the Ganache: Heat cream until just simmering. Pour over chopped chocolate and let sit 2 minutes.

  5. Stir until smooth. Add butter and vanilla; mix until glossy.

  6. Pour ganache into cooled crust. Chill until set (at least 2 hours).

  7. Serve chilled or at room temperature.
