12 oz penne pasta
2 tbsp olive oil
2 boneless, skinless chicken breasts, cubed
Salt and pepper to taste
1 tsp Italian seasoning
3 cloves garlic, minced
2 cups cherry tomatoes, halved
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Instructions
Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and fully cooked. Remove and set aside.
In the same skillet, sauté minced garlic until fragrant, about 1 minute. Add cherry tomatoes and cook until softened, 3-4 minutes.
Pour in chicken broth and simmer for 2-3 minutes. Add the cooked chicken back into the skillet.
Toss the cooked pasta into the skillet, mixing well. Add reserved pasta water if needed to loosen the sauce.
Stir in Parmesan cheese and fresh basil. Serve immediately.
Notes
Substitute cherry tomatoes with diced Roma tomatoes if preferred.
Add a pinch of red pepper flakes for a spicy kick.
Use whole wheat or gluten-free pasta for dietary preferences.
