This Chicken Tomato Pasta recipe is a simple, flavorful dish featuring tender chicken, fresh tomatoes, and a light garlic sauce.

Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, cubed
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant, about 1 minute. Add cherry tomatoes and cook until softened, 3-4 minutes.
  • Pour in chicken broth and simmer for 2-3 minutes. Add the cooked chicken back into the skillet.
  • Toss the cooked pasta into the skillet, mixing well. Add reserved pasta water if needed to loosen the sauce.
  • Stir in Parmesan cheese and fresh basil. Serve immediately.

Notes

  • Substitute cherry tomatoes with diced Roma tomatoes if preferred.
  • Add a pinch of red pepper flakes for a spicy kick.
  • Use whole wheat or gluten-free pasta for dietary preferences.
