Ingredients

  • Chicken thighs (bone-in, skin-on)
  • Olive oil
  • Butter
  • Garlic cloves, minced
  • Mushrooms, sliced
  • Heavy cream
  • Chicken broth
  • Parmesan cheese, grated
  • Fresh thyme
  • Salt
  • Black pepper
  • Fresh parsley (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper, then sear them skin side down until golden brown. Flip and cook until the other side is browned. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant. Add mushrooms and cook until softened and browned.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Stir in heavy cream and Parmesan cheese.
  • Return the chicken thighs to the skillet, skin side up, and spoon the sauce over the top.
  • Simmer the chicken in the sauce until fully cooked and the sauce has thickened, about 10-15 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

  • Use a mix of mushrooms like cremini or shiitake for extra flavor.
  • Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
