This Cheesy Taco Pasta recipe is a quick and easy dinner idea combining taco-seasoned beef, pasta, and loads of melty cheese for a creamy, flavorful meal your family will love.

Ingredients

  • 1 lb ground beef
  • 12 oz pasta (shells or rotini work best)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 1/2 cups beef or chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Cook the pasta according to package directions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add ground beef and diced onion, cooking until the beef is browned and the onion is softened. Drain excess grease.
  • Stir in minced garlic and cook until fragrant. Add taco seasoning, diced tomatoes, and broth. Mix well and bring to a simmer.
  • Reduce heat to low and stir in cream cheese until melted. Add cooked pasta to the skillet and mix to coat in the sauce.
  • Stir in shredded cheddar cheese and sour cream until creamy and smooth. Season with salt and pepper to taste.
  • Garnish with fresh cilantro and serve warm.

  • For extra spice, add diced jalapeños or a pinch of cayenne pepper.
  • Substitute ground beef with ground turkey or chicken for a lighter option.
