Cheesy Taco Casserole is an easy, family-friendly dish packed with bold taco flavors. This casserole layers seasoned ground beef, beans, tortilla chips, and plenty of cheese for a satisfying, crunchy, and cheesy meal. Perfect for busy weeknights, it’s a crowd-pleaser that can be customized with your favorite taco toppings like sour cream, jalapeños, or guacamole.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chiles, undrained
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • 1 cup sour cream
  • Optional toppings: diced tomatoes, green onions, jalapeños, guacamole

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef. Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
  • In a large mixing bowl, combine the cooked beef, black beans, diced tomatoes, and 1 cup of shredded cheese.
  • Layer half of the crushed tortilla chips on the bottom of a greased 9x13-inch baking dish.
  • Spread the beef mixture evenly over the chips, then top with the remaining chips and cheese.
  • Bake for 20-25 minutes until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes, then top with sour cream and any additional toppings.

Notes

You can use ground turkey or chicken instead of beef. Add jalapeños or hot sauce if you prefer more heat. Serve with a side of rice or salad.
