1 lb ground beef
1 cup uncooked white rice
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
2 cups beef broth
1 ½ cups shredded cheddar cheese
1 small onion, diced
2 tbsp olive oil
Salt and pepper to taste
½ tsp garlic powder
½ tsp paprika
Optional garnish: chopped parsley
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened.
Add ground beef to the skillet and cook until browned. Drain excess fat.
Stir in garlic powder, paprika, salt, and pepper.
In a large mixing bowl, combine cream of mushroom soup, cream of chicken soup, beef broth, and uncooked rice. Mix well.
Add the cooked ground beef mixture to the bowl and stir to combine.
Pour the mixture into a greased 9x13-inch baking dish. Spread evenly.
Cover tightly with foil and bake for 50 minutes.
Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley, if desired.
Notes
You can substitute cream of mushroom or chicken soup with other cream-based soups if preferred.
For a spicy kick, add a pinch of cayenne pepper or red pepper flakes.
