Buffalo Chicken and Cheddar Rice is a flavorful one-pan dish featuring tender chicken tossed in spicy Buffalo sauce and mixed with creamy cheddar rice. This easy recipe combines bold flavors for a quick and satisfying meal perfect for weeknight dinners or game day!

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup Buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 1/4 cup blue cheese crumbles (optional for garnish)

Instructions

  • In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add rice and toast for 1-2 minutes.
  • Stir in chicken broth and Buffalo sauce, bringing it to a simmer. Cover and cook for 15-18 minutes, until rice is tender and liquid is absorbed.
  • Stir in cheddar cheese and cream cheese until melted and creamy.
  • Add cooked chicken back to the skillet, mixing to combine.
  • Garnish with green onions and blue cheese crumbles (if using), and serve hot.

Notes

For a milder dish, reduce the amount of Buffalo sauce or use a mix of Buffalo sauce and ranch dressing. You can also swap chicken breast for ground chicken or turkey for a different texture.
