Ingredients

Scale
  • For the Casserole:

    • 4 cups broccoli florets, steamed or blanched
    • 1 (10.5 oz) can cream of chicken soup
    • 1/2 cup sour cream
    • 1/2 cup mayonnaise
    • 1 1/2 cups shredded cheddar cheese
    • 1 tsp garlic powder
    • 1/2 tsp onion powder
    • Salt and pepper, to taste
  • For the Topping:
    • 1 cup crushed Ritz crackers (or breadcrumbs)
    • 2 tbsp melted butter

Instructions

  • Preheat Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Prepare the Mixture:
    • In a large mixing bowl, combine cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir in 1 cup of shredded cheddar cheese.
  • Assemble the Casserole:
    • Add shredded chicken and steamed broccoli to the bowl and mix until evenly coated with the sauce. Spread the mixture into the prepared baking dish.
  • Add the Topping:
    • Sprinkle the remaining 1/2 cup of cheddar cheese on top. In a small bowl, mix the crushed Ritz crackers with melted butter, then sprinkle over the casserole.
  • Bake:
    • Bake for 25-30 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
  • Serve:
    • Let cool for 5 minutes before serving. Pair with rice, pasta, or enjoy it on its own!

Notes

  • For a healthier version, substitute mayonnaise with Greek yogurt.
  • Add cooked rice or quinoa to make it a one-dish meal.
  • Store leftovers in an airtight container for up to 3 days.
