This beef quesadilla recipe is a quick and satisfying meal filled with seasoned ground beef, melted cheese, and a crispy tortilla. The beef is cooked with spices, then layered with cheese and toasted in a skillet to perfection.   • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 8 large flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (optional)
  • 2 tbsp vegetable oil (for frying)
  • Sour cream, salsa, and guacamole (for serving)

Instructions

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add taco seasoning and water, stir, and cook until the beef is well coated and the sauce thickens. Set aside.
  • Heat 1/2 tablespoon of oil in a large skillet over medium heat. Place one tortilla in the skillet.
  • Sprinkle 1/4 cup of cheese evenly over half of the tortilla, then add a portion of the cooked beef, onions, and bell peppers if using.
  • Fold the tortilla in half and cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
  • Repeat with the remaining tortillas, adding more oil as needed.
  • Slice the quesadillas into wedges and serve with sour cream, salsa, and guacamole.

Notes

  • You can add extra veggies like corn, black beans, or jalapeños for more flavor.
  • Swap out ground beef for shredded chicken or pork for variety.
  • For a crispier quesadilla, brush the tortillas with a little butter before frying.
