  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups cooked rice
  • 2 cups enchilada sauce (red or green)
  • 10 small corn tortillas (cut into halves)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 can black beans (drained and rinsed)
  • 1 small onion (diced)
  • 1 cup corn (optional)
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat and add taco seasoning. Stir to combine.
  • Grease a 9x13-inch casserole dish with cooking spray.
  • Spread a thin layer of enchilada sauce on the bottom of the dish.
  • Layer tortilla halves evenly across the sauce.
  • Top with 1/3 of the cooked beef, cooked rice, black beans, corn (if using), and cheese.
  • Pour some enchilada sauce over the layer and repeat the layers two more times, finishing with cheese on top.
  • Cover with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Let it rest for a few minutes, garnish with fresh cilantro, and serve.
