  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Set aside.
  • In the same skillet, add garlic and cook for 1 minute until fragrant. Add heavy cream, chicken broth, and Italian seasoning. Simmer for 2-3 minutes until slightly thickened.
  • Stir in sun-dried tomatoes, spinach, and Parmesan cheese. Cook until spinach wilts.
  • Transfer the chicken breasts to a greased casserole dish. Pour the creamy sauce over the chicken.
  • Sprinkle shredded mozzarella cheese on top.
  • Bake for 25-30 minutes, until chicken is cooked through and the cheese is melted and bubbly.
  • Serve hot.

Notes

  • You can substitute fresh spinach with frozen spinach (thawed and drained).
  • For extra flavor, top with fresh basil or parsley before serving.
