    • 2 cups all-purpose flour

    • 1 cup granulated sugar
    • ½ cup brown sugar
    • ¾ cup vegetable oil
    • 2 large eggs
    • 1 tsp vanilla extract
    • 2 cups diced apples (such as Granny Smith)
    • 1 cup chopped pecans
  • Caramel Glaze:
    • ½ cup brown sugar
    • ¼ cup butter
    • 2 tbsp milk or heavy cream
    • ½ tsp vanilla extract

Instructions

  • Prepare the Cake Batter: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan. In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • Mix Wet Ingredients: In another bowl, beat granulated sugar, brown sugar, and oil until well combined. Add eggs one at a time, then stir in vanilla.
  • Combine and Fold in Additions: Gradually add dry ingredients to the wet mixture. Fold in diced apples and pecans until evenly distributed.
  • Bake: Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let cake cool.
  • Make the Caramel Glaze: In a saucepan, heat brown sugar, butter, and milk over medium heat, stirring constantly. Bring to a boil and cook for 2 minutes. Remove from heat, add vanilla, and pour over the cooled cake.

Notes
